As I’ve mentioned in the past, when it comes to camp food I have two main requirements when selecting new meal ideas for our camping trips: They have to be simple, and they have to be crowd pleasers. Today’s recipe, tasty Campfire Beef BBQ Goulash, met both requirements. Like its close cousin, Stovetop Goulash, it’s hearty comfort food that you can pull together quickly, so after a fun day of exploring you can get dinner on the picnic table in a jiffy.

The great thing about this recipe is that it offers a lot of flexibility. If your family doesn’t like green beans, swap them out with canned corn. Prefer ground turkey? Make another swap. Bottom line: Make this recipe your own and one your family will love.
To start off, brown the ground beef with the onions in a bit of olive oil. On this camping trip Jarrett cooked over the campfire in a cast iron pot. But again, the beauty of this recipe is that you have a lot of flexibility. On a rainy day, you could cook over the RV stove. Or it could be prepared on a camp stove outside. So no matter the weather or what equipment you have, it’s easy peasy–that’s the goal. 🙂
After the meat is no longer pink and the onions are tender, add in the remaining ingredients: the veggies, potatoes, baked beans, barbecue sauce, and a little bit of water if needed to add more moisture.
Allow the goulash to return to a simmer and cook until everything is heated through. Serve warm. A side of cornbread would mesh really well with this recipe. We haven’t yet perfected making cornbread in a dutch oven, but sometimes I will make up some corn muffins before our camping trips and just heat them up in the RV oven for a few minutes before we eat. Other times we have brought along a box of Krusteaz’s Gluten-Free Honey Cornbread–mmmm, so good!

- 1 pound ground beef
- 1 onion chopped
- olive oil
- 2 cans potatoes diced or whole, drained
- 1 can green beans drained
- 1 can carrots drained
- 1 can baked beans
- 1 cup barbecue sauce (more or less to taste)
- water as needed for moisture

- Begin by browning the ground beef and onion in olive oil until meat is no longer pink and onions are tender. Drain off any extra fat.
- Add potatoes, vegetables, baked beans, and barbecue sauce. Let simmer until heated through. More barbecue sauce or a little bit of water can be added if additional moisture is needed.
