When we first started camping, our pie iron dinners were quite simple: pizza ones made from bread slices, pizza sauce, mozzarella cheese, and pepperoni. Although our kiddos still enjoy pie iron pizzas, our friends introduced us to this version of a pie iron dinner–pie iron tortillas–and it’s now hands down our favorite pie iron meal.
Ingredients (mix and match to your tastes):
- Tortillas (the larger sized ones have worked better for us because you can fold them up to keep all the good stuff in)
- Taco meat (or chicken, or no meat at all if you prefer vegetarian)
- Cheese
- Sautéed peppers, mushrooms, and onions
- Olives
- Salsa
- Sour cream
To start, spray the pie iron with cooking spray. Place your fixins in the middle of the tortilla (saving the sour cream for dipping). Fold the two sides of the tortilla in and then fold in half, and in half again.
Put the folded tortilla into the pie iron with the folded side down. Close the pie iron and cook over the fire for about 7-10 minutes (more or less depending on the heat of your fire), flipping midway, and checking periodically to make sure the heat isn’t scorching the tortilla.
It’s ready to eat when it’s nicely browned (and melted together on the inside). Enjoy!
