Today I’m sharing another one of my favorite, easy camping recipes: Camping Stovetop Goulash. It’s hearty comfort food that you can pull together in as little as 30 minutes, so after a fun day of exploring you can get dinner on the picnic table in a jiffy. You can prepare this versatile recipe on an RV stove or camping stove, or you can cook it in a dutch oven over a campfire. So no matter the weather, this recipe has you covered.
Like my other go-to camping menu ideas, before our trip I prep as many of the ingredients ahead of time, such as pre-measuring spices into zippered baggies or little containers. This saves on space in the camper, and makes dinner prep even quicker.
Ingredients:
- 1 pound of ground beef or ground turkey
- 1 onion, chopped
- 1-2 cans of mixed veggies (or you can use a ~16 oz frozen bag of mixed veggies)
- 2 10 3/4 oz condensed tomato soup
- 1 cup of water
- 2 tsp Worcestershire sauce
- 1 tsp salt
- 1 tsp chili powder
- 1/2 tsp dried oregano
- 1/2 tsp paprika
- pepper to taste
- Instant mashed potatoes, prepared according to the package
Directions:
Brown the meat and chopped onion in a skillet until the meat is no longer pink, then drain. Add the veggies, soup, water, Worcestershire sauce, and seasonings. Bring to a simmer and cook for 10-15 minutes until the sauce has thickened a bit. Serve the goulash over the instant mashed potatoes. Serves approximately 4-6, depending on appetites.
