While camping with my group of scouts, I made a breakfast hash that was a big hit with the boys and filling for even the dads. This is a flexible camping meal, so you could easily add to the peppers and onions or switch them out for your favorite veggies–perhaps mushrooms, spinach and garlic. The hash would also go great with a side of scrambled eggs.
Ingredients (for ~6 servings):
- One tube of sausage
- One onion, cut up into small chunks
- One green pepper, cut up into small chunks
- Eight hash brown patties
- Oil
- Salt and pepper
Directions:
Brown the sausage in a pan with a little oil. (These pictures aren’t the best because it was still dark when I started cooking and I had to use the camera flash.)
You can either begin sautéing the onions and peppers in a separate pan, or once the sausage has browned for 5-10 minutes you can add the peppers and onions to the same pan and continue cooking until the veggies are tender and the sausage is cooked through. Add salt and pepper as desired.
While the sausage and veggies are cooking, brown the hash brown patties. Once they have reached a nice golden brown color–and are completely heated through–use a spatula to break the patties into pieces.
Add the hash brown pieces to the sausage and veggies, mix it all together, and serve. That’s all it takes for a simple but hearty camping breakfast.
